How to Cook a Delectable Noodle Soup- Sotanghon

In the Philippines, soup recipe is always been part of our day to day diet. Soup is a typical Filipino side dish for dry such as Fried or grill recipe. There is also some sort of Filipino soup recipe that usually prepare not only just for viand but for mid day snack as well. Sotanghon is a best example of Filipino soup for versatility, it usually prepare as a soup for day to day recipe but it is also prepare as a snack, while sotanghon is just a simple recipe it is also prepared during special occasion or just for simple Filipino gathering. Sotanghon is known as a traditional Filipino new years eve recipe as it always a regular food staple during those special occasion, Filipinos are greatly influenced by Chinese and one of their belief is to prepare a food with round shape during special, sotanghon has become a favorite during Christmas for the reason of the hardboiled egg (round shape) along with it. If you want to prepare and impress family and friend, you should offer them a Filipino delectable soup known as sotanghon.

Ingredient for Sotanghon: 

¾ kg of Sotanghon noodle (dip in a basin with water to soften noodle) 
½ kg of Chicken breast 
3-4 tbsp minced garlic 
1 whole onion, slice Tengang daga ( a variety of edible mushroom in Philippines) 
2-3 tbsp cooking oil 
1 carrot Atsuete oil (food coloring) 
Chicken cubes 
6 pcs Hard boiled egg, remove shell 
½ Tsp ground pepper corn Vetsin Rock salt to taste

Procedure for Cooking: 
 In a casserole, bring to boil 1 ½ liter of water and include noodle to cook for 1-2 minute, drain and set aside. In a casserole bring to boil chicken for 20-25 minute, flaked chicken meat and set aside. In a heated non stick pan with cooking oil, sauté garlic until it golden brown, add onion and cook for 1 minute then include flaked chicken meat, 2-3 tbsp of fish sauce (patis) and simmer for 5 minute. Add tengang daga and simmer for several minute while mixing from time to time. Add chicken stosk andbing to boil and simmer, add salt to taste, carrots, vetsin, ground peppercorn, and chicken seasoningcube, and atsuete oil to add color to the broth. Add sotanghon and bring to boil for minute, if the the noodle absorved the broth add another 2-3 cups of water and seasoning to enhanced flavor. Served sotanghon soup recipe while it is hot with puto (steam rice), share and enjoy.
